Cold Asian noodle plate

This is a nice cool dish for a hot summer day…and a great way to use green onions from the farm!

Note: You’ll need to make this at least a couple hours ahead of time to allow everything to cool.

Ingredients:

  • 1 package of soba noodles (You can also use rice noodles.)
  • 1 bunch of green onions
  • 1 package of tofu (You can also use chicken.)
  • 3 tablespoons rice vinegar
  • 8 tablespoons soy sauce
  • 3 tablespoons sesame oil (You can also use olive oil.)
  • 1/4 cup peanut butter
  • sesame seeds

Instructions:

  1. Cook noodles according to package instructions. Drain. Toss with 2 tablespoons rice vinegar, 4 tablespoons soy sauce, and 2 tablespoons sesame oil. Put in refrigerator to chill.
  2. Chop the bottom white part of the green onion into small slices. Set aside the green part for later. Saute the sliced white part in a little oil. When soft and slightly golden, remove from the pan.
  3. In the same pan, saute sliced tofu in oil until golden brown. Remove from pan.
  4. In the same pan, put 1 tablespoon rice vinegar, 4 tablespoons soy sauce, and peanut butter. Whisk in 1/4 cup water or more if needed to make a smooth sauce. Stir over low heat for a couple minutes.
  5. In a bowl, mix peanut sauce, fried tofu, and fried green onions. Put in the refrigerator to cool.
  6. When ready to serve, arrange noodles on a plate. Top with slices of marinated tofu, and sprinkle with sesame seeds.
