This is a nice cool dish for a hot summer day…and a great way to use green onions from the farm!
Note: You’ll need to make this at least a couple hours ahead of time to allow everything to cool.
Ingredients:
- 1 package of soba noodles (You can also use rice noodles.)
- 1 bunch of green onions
- 1 package of tofu (You can also use chicken.)
- 3 tablespoons rice vinegar
- 8 tablespoons soy sauce
- 3 tablespoons sesame oil (You can also use olive oil.)
- 1/4 cup peanut butter
- sesame seeds
Instructions:
- Cook noodles according to package instructions. Drain. Toss with 2 tablespoons rice vinegar, 4 tablespoons soy sauce, and 2 tablespoons sesame oil. Put in refrigerator to chill.
- Chop the bottom white part of the green onion into small slices. Set aside the green part for later. Saute the sliced white part in a little oil. When soft and slightly golden, remove from the pan.
- In the same pan, saute sliced tofu in oil until golden brown. Remove from pan.
- In the same pan, put 1 tablespoon rice vinegar, 4 tablespoons soy sauce, and peanut butter. Whisk in 1/4 cup water or more if needed to make a smooth sauce. Stir over low heat for a couple minutes.
- In a bowl, mix peanut sauce, fried tofu, and fried green onions. Put in the refrigerator to cool.
- When ready to serve, arrange noodles on a plate. Top with slices of marinated tofu, and sprinkle with sesame seeds.
