Summer squash gratin

This is a great side dish. Add a big  salad and bread, and you’ve got a meal!

Ingredients:

  • 4-5 small summer squash (green zucchini or yellow), cut in rounds
  • 4-5 small or one large onion, thinly sliced
  • olive oil
  • 2 tablespoons flour
  • 1/2 cup cream, half-and-half or milk
  • salt, pepper
  • 1/4 cup bread crumbs
  • 1/2 cup parmesan cheese

Instructions:

  1. Saute onions over low heat until soft and golden brown.  Set aside.
  2. Saute squash rounds over low heat until soft.  Set aside.
  3. In the pan, put 1 tablespoon of olive oil and 2 tablespoons of butter. Add flour. Stir for 1 minute. Whisk in cream or milk. Simmer until thick. Add 1/4 cup parmesan cheese and salt and pepper to taste.
  4. Put squash rounds in a casserole pan.

    Pour white sauce over the squash. Spread onions on top. Sprinkle bread crumbs over that and the remaining parmesan cheese on top.

  5. Bake at 375 degrees for 20 minutes or until top is bubbly and brown. Serve.

    Several people have told me that they were disappointed that you didn’t sell spices (basil, parsely, etc. (I have my own, so this doesn’t apply to me.) Spices are something that should earn you money, since small amounts are often sold at relatively high prices. Just a thought …..

    Thanks for the comment, Dinah. Actually we do sell spices! We sell some fresh ones (basil, thyme, sage parsley, cilantro) — people who are interested in these might call or email ahead since we don’t always have them at the stand.
